Simple weekday lunch at my office desk – nothing fancy, but it did satisfy and it was healthy, so double win, no?
Chicken tenders grilled with red pepper flakes (on our Panini grill at work), half a steamed yam from the night before, fresh Roma tomato slices with olive oil, salt and pepper, all sitting on top of a deeply seasoned bed of that hearty lentil and onion puree. It’s not winning any awards, but as far as square meals go, and sitting in my own office, I’m not complaining!
