How do I feel: Totally fine, except hungry every minute today.

Tuesdays are pretty boring (sorry, Tuesday). Not a ton to report about today, which I should see as a blessing! The normal days are totally underrated! Of course, I did manage to get a parking ticket while I was in a loading zone for 4 minutes….did you know that even if you are ACTUALLY loading or unloading in the loading zone you still must pay at the meter? Because you do. Even if you are only there for less than 5 minutes. I’m really glad I am NOT a meter maid cop, because I’d have the world’s worst karma. Also, all my friends would constantly be (a) complaining about their tickets and how stupid all the signs in the city are, (b) asking me clarifying questions, and (c) asking me to get them out of tickets.

Besides that, my buddy Marc got stuck in Seattle for an extra night (yay for me!!!) and we did a LATE dinner at Palace Kitchen which was totally delicious and of course, their Chef was 100% on board with making sure I got a dish that I was interested in and modified it to be Whole30 compliant. I live in an amazing city with wonderfully open-minded chefs. I am a lucky girl!

Food Diary:

Breakfast:

  • 10oz H2O, coffee + homemade almond milk, 2 soft boiled eggs, 1 banana

Lunch:

  • Chopped salad with avocado, onions, tomato, balsamic vinaigrette and red peppers, added salmon fillet (from Purple in Bellevue. They totally heeded my “please don’t use any dairy” in the cooking of the salmon. Awesome.)
  • 24oz H2O
  • Pot of tea (32oz)

Dinner: (I sort of had 2 dinners…..they were both really good)

  • Roasted carrots, parsnips, yams and chicken
  • Blackened cod with sautéed greens + garlic

Lesson of the day: Sometimes, even when you think you’re following the rules, you’re actually not. It pays to READ CAREFULLY so that you don’t waste $53 of your HARD EARNED DOLLARS on a stupid parking ticket. Also, I have good karma and I’m not going to ruin it by contesting a ticket for doing something I shouldn’t have been doing. Wah wahhhhhhh. Won’t make that mistake again!

PS: Joke’s not on me, since I’m selling my car and this is the last week I’m driving it, so I won’t have to worry about parking tickets since I wont’ have a car! WOOT!
